My pursuit of new gastronomic challenges in Korea recently made me skate on thin ice as I found out that dog meat consumption is still present in Korea. Nevertheless, it is a very sensitive topic in Korean society. To understand the context behind dog meat consumption in Korea, it is important to know that it started a long time ago when Korea was a country with poor economic condition and dog meat, known for being rich in protein, was much more affordable meat compared to beef, pork, and even chicken. In the three past decades, however, the improvement of the country’s economic situation and many negative reactions from Western countries led to a significant decrease in the dog meat consumption among Koreans. According to various surveys conducted in the past few years the majority of young Korean people refuse to consume dog meat because of ethical reasons. Even so, dog meat restaurants, who neither have fully legal nor illegal status in South Korea, still exist and they have enough visitors to keep the business going. My curiosity led me to visit one of the few dog meat restaurants in Daejeon.
한국에서 아직까지 개고리를 소비하는 것이 여전히 존재한다는 사실을 최근에 알게 되었을 때 나에게 한국에서 새로운 음식을 찾아 도전을 추구하는 것은 모험한 일이 되어버렸습니다. 그럼에 불구하고 이 주제는 한국 사회에서도 매우 민감한 주제입니다. 한국에서 개고기 소비의 배경을 이해하기 위해서는 한국은 경제 상황이 열악한 나라였고 단백질이 풍부한 개고기가 쇠고기, 돼지 고기, 심지어 닭고기까지 그들보다 훨씬 더 저렴한 고기였다는 사실을 아는 것이 중요합니다. 그러나 지난 30 년 동안 한국의 경제 상황이 개선되고 서구 국가들의 많은 부정적인 반응으로 한국인의 개고기 소비가 크게 감소했습니다. 지난 몇 년간 실시된 다양한 조사에 따르면, 대다수의 한국 젊은이들은 윤리적인 이유로 개고기 소비를 거부합니다. 그럼에도 불구하고 한국에서 완전히 합법적도 아니고 불법적도 아닌 개고기 전문점은 여전히 존재하며 사업을 계속할 수 있는 충분한 방문객이 있습니다. 나는 호기심이 생겨 대전에 있는 몇 개 개고기 전문점을 방문했습니다.
Just as I thought, the restaurant didn’t have many visitors. When I arrived, there was only one family having lunch, all of them were elderly people.
생각했듯이 식당에는 방문객이 많지 않았습니다. 내가 도착했을 때 점심을 먹고 있었던 단 한 가족이 있었습니다. 모두 노인이었습니다
Two of the most famous dishes made from dog meat are Bosintang and Gae Suyuk. Bosintang (보신탕) is a stew made from boiled dog meat and vegetables. Word bosin (보신) is Korean word of Chinese origin and it translates as “nurturing of the body”. Another word for this dish is Yeongyangtang (영양탕), which literally means “nutritious stew”.
개고기로 만든 가장 유명한 두 가지 요리는 보신탕과 개수육입니다. 보신탕은 개고기와 야채를 삶은 스튜입니다. 보신은 중국에서 유래한 한국어 단어로 “몸의 영양을 보충함”으로 번역됩니다. 이 요리의 또 다른 이름은 영양탕이라며 말 그대로 “영양 찌개”를 의미합니다.
Gae Suyuk (개 수육) is boiled dog meat cut into thin slices. It is usually served with a sauce made by mixing gochujang (sweet-and-spicy red chili pepper sauce) with perilla powder. Koreans say that the more perilla powder you add in gochujang, the better it tastes.
개수육은 얇게 썰어 삶은 개고기입니다. 보통 고추장 (달콤하고 매운 고추장)에 들깨를 넣어 만든 소스와 함께 제공됩니다. 한국인들은 고추장에 들깨를 많이 넣을수록 맛이 좋다고 합니다.
I took an interview with people there about the taste. When it comes to taste, dog meat has a taste that is quite similar to beef. If one tries to eat dog meat without knowing what he is eating, beef is the first thing that would come to his mind.
The fact that there were only few visitors in the restaurant and that they were elderly people proves that dog meat eating culture in Korea is not popular among younger generations and is slowly disappearing. While dog meat consumption is ethically questionable, and whether we like it or not, it is still an important part of Korean food culture and gastronomic history.
개고기를 먹는 사람들에게 인터뷰를 진행했습니다. 맛에 관해서는 개고기는 소고기와 비슷한 맛을 가지고 있습니다. 심지어 무엇을 먹고 있는지 모른 채 개고기를 먹어 보면 가장 먼저 떠오르는 것이 소고기라고 말할 수 있습니다.
식당 방문객이 적고 거의 고령자라는 사실은 한국의 개고기 먹는 문화가 젊은 세대에게 인기가 없고 서서히 사라지고 있음을 증명합니다. 개고기를 먹는 것은 윤리적으로 논란을 벌을 만하지만 우리가 좋아하든 싫어하든 여전히 한국 음식 문화와 역사에서 중요한 부분입니다.
